In Rome, the restaurant of South American cuisine by chef Paulo Aires, one of a kind in the gastronomic panorama of the Capital, with a beautiful cocktail bar and warm exotic interiors.<\/p>\n\n\n\n

Near Campo dei Fiori <\/strong>in a lively and authentic neighborhood of the city, Reserva is a South American restaurant with a Brazilian soul, the chef<\/strong> is, in fact, Paulo Aires<\/strong> born in Maranh\u00e3o.<\/p>\n\n\n\n

Reserva opened in 2019<\/strong>, from the meeting between the chef and the Lisi family<\/strong>, already very renowned and active in the world of Roman fine dining with the nearby Pierluigi fish restaurant and the Hotel De\u2019 Ricci.<\/p>\n\n\n

At Reserva you can breathe in the authentic colors, flavors and culture of Latin America. (Lisi family)<\/p>\n<\/blockquote>\n\n\n\n

An authentic spirit that brings the best of Latin gastronomic traditions<\/strong> to the table thanks to extensive research that uses mainly raw materials from South America<\/strong>, with a large use of spices and fruit.<\/p>\n\n\n\n

Chef Paulo Aires’ dishes are the result of a continuous study of the great classics of South American cuisine, thanks also to a brigade formed only by chefs<\/strong> of different nationalities from Latin America <\/strong>who have brought with them their own tradition and knowledge.<\/p>\n\n\n

The quality of fish<\/strong> and shellfish<\/strong> is excellent, as is the Argentinean meat<\/strong>, cooked using methods that, when possible, avoid direct heat to make the preparations healthy and natural.<\/p>\n\n\n\n

On the menu<\/strong> we find appetizers such as cheviche, tacos and various tartares, up to more creative dishes such as Shrimp with Maracuja, Crispy Tapioca with Beer and Lime Sauce and Scallop in \u201cTiraditos sauce\u201d, sweet potato and smoked avocado, up to Picanha and classics of Italian cuisine such as Florentine steak.<\/p>\n\n\n

Designed by Studio DkArchitetture, the interiors of Reserva are characterized by an exotic charm <\/strong>highlighted by tropical plants <\/strong>and warm colors<\/strong> that recall South America.<\/p>\n\n\n\n

At the entrance, the protagonist, there is a large bar counter <\/strong>where expert bartenders <\/strong>prepare exceptional drinks and cocktails<\/strong>, such as the Carnaval, dedicated to Brazil, based on cachaca, pineapple-infused rum, plantain syrup, passion fruit puree and lime, or El Gringo, dedicated to Mexico, with habanero-infused tequila, mezcal, lime, habanero syrup.<\/p>\n\n\n

Reserva is a truly special place, unique in Rome, where you can taste top-quality South American cuisine in an informal, yet refined, fun and engaging environment.<\/p>\n\n\n\n

The meeting between the chef and the Nisi family was born during a trip to South America, which was followed by a friendship that gave rise to the birth of the project.<\/p>\n\n\n\r\n
